Grilled Artichokes w/ Feta

Lets make the first entry one for all but the most strict of carnivores shall we...

You will need:

*3-4 medium artichokes halved
*5 cloves fresh garlic
*4-5 medium lemons
*7 Tbs olive oil
*Salt (you should always have salt.. Go try new ones whenever the opportunity arises)
* A big pot for boiling (6 quart is perfect but smaller can be made to work)
*Fire

First things first, unless you absolutely cannot, this is one of those things that I firmly believe should be cooked over charcoal or wood. It will do so much more for the flavor than propane or an electric element in your stove.

  • So to begin, let your fire burn its way down to coals, (by no means should you waste this grilling time. Take advantage of the heat for some cob corn or some tasty rib eyes.)

  • While you are waiting, clean and halve a 3 or 4 medium artichokes ( adjust accordingly for company or appetites [beth this means you])

  • Give your newly split chokes a quick dip in boiling water, lets call it 10-12 minutes ish...

For those of you who don't know me, I'm not really big on specifics. It is far more important to have a good time with food which is why all recipes herein will be for multiples of people. You will learn what works best for you along the way.

So now back to the important stuff.... FOOD!!!!

  • By now your soon to be tasty morsels should have softened up a bit and are probably feeling pretty naked... Lets get 'em ready for the party shall we?
  • in whichever order you like, combine 5 crushed garlic cloves ( leaving it a bit chunky if you ask me... it's tastier that way later), 4-5 lemons juiced (depending on preference), and 7 Tbs olive oil
  • Brush the mixture lightly on the cut side of your chokes, sprinkling lightly with some coarse salt, kosher or sea, your pick, and toss 'em on the grill.
  • At some point they will start to get good and crispy around the edges, that's a good sign it's time to turn. Make sure to brush the backs with your garlic lemony goodness before you do so.
By now I'm sure your coals have all but burned out, that is unless you built a bonfire to all things tasty... but I'm going to assume you have put your pyroticnic tendencies asside in the name of all things yummy.

  • Once you roll your lil buddies on their backs like so many drunken turtles.. throw the lid on to keep in thewhat little heat is left and open what is probably not your first beer of the night.
  • After 10 minutes or so peek in to see how they are coming along. A little blackening around the edges is to be expected, and is generally a good sign that the grub is good to go.
  • Pull those piping hot half domes of love off the grill and place them, cut side up on a platter and sprinkle with a healthy dose of Feta cheese, then drizzle some of your remaining garlic goo over the top.
  • Waiting a few minutes so as not to burn your recently beer cooled mouth, Enjoy!!!
